Spicy home-style coral lentil soup

- 300 g 300 g Coral lenses
- 3 3 Carrots
- 3 3 garlic pod(s)
- 1 1 Onion(s)
- 1 1 Tomato(s)
- Olive oil
- 1 1 Cumin
- 1 1 Paprika
- 0.5 0.5 Espelette pepper
- 2 l 2 l Water
- Salt
- pepper
Method
- 1.Start by preparing all the vegetables: peel the garlic and onion, then mince them finely. Peel the carrots and cut them into small pieces.
- 2.Wash the tomato, cut it into quarters and remove the seeds. Rinse the coral lentils well in a colander under cold water until the water is clear.
- 3.In a large pot, heat olive oil over medium heat. Add the spices of your choice and let them heat for a few seconds stirring to release their aromas.
- 4.Add the prepared vegetables (carrots, tomato, onion and garlic) to the cocotte. Bring them back for 3 to 4 minutes, stirring regularly.
- 5.Add drained coral lenses, then pour water. Mix all the ingredients well and cook over low heat for about 20 minutes.
- 6.After cooking, mix the soup according to the desired texture. Put it back on fire to warm it if necessary, then taste and adjust the seasoning according to your taste.
