Ingredients
For 1 servings
- 100 ml whole cow’s milk (or UHT for that distinctive Spanish taste and mouthfeel)
- sugar to taste
- 100 ml strong espresso best made with freshly ground beans
Method
- 1.Put the milk and sugar, if using, in a small saucepan and heat until small bubbles appear around the edges. Continue to heat until steaming hot (65–70C on a thermometer) and lightly whisk.
- 2.Pour the espresso into a cup and pour over the milk.
