Spinach savoury muffins

Ingredients
For 12 servings
- 200 g fresh spinach
- 100 g cheddar grated
- 1 c. à soupe dried thyme
- 2 eggs
- 150 ml Greek yogurt
- 2 -3 tbsp milk
- 150 g plain flour
- 150 g wholemeal flour
- 3 c. à café baking powder
- butter for the tin
Method
- 1.Set the oven to 180C/160C fan/gas 4. Put the spinach in a food processor and blitz until shredded (not puréed). Put in a bowl along with the grated cheese and dried thyme.
- 2.Crack the eggs into a bowl, and mix along with the yogurt. Mix in 2 tbsp milk, adding another tablespoon if needed.
- 3.Sieve the flour and baking powder over the bowl, then mix well to combine.
- 4.Butter a muffin tin, then spoon in the batter and bake for 20-25 mins. Cool.
