Minced meat tajine with Oriental flavours

- 750 g 750 g ground beef
- 1 1 small bouquet of parsley
- 1 1 small bouquet of coriander
- 1.5 c. à soupe 1.5 càs of ground cumin
- 0.75 c. à soupe 0.75 paprika càs
- 1 1 onion
- 1 g 1 g of garlic
- salt
- pepper
- 300 g 300 gr tomato pulp
- 2 2 eggs
- olive oil
- 1 1 onion
- 0.75 c. à soupe 0.75 chopped parsley
- 0.75 c. à soupe 0.75 chopped coriander càs
- cumin
- salt
- pepper
Method
- 1.Start by heating a fillet of olive oil in the bottom of your tajine over medium heat.
- 2.Cook the chopped onion until it becomes translucent and slightly golden, without letting it burn.
- 3.Then add the tomato pulp, chopped fresh herbs, salt, pepper and cumin. Mix well and simmer over very low heat while you prepare the kefta.
- 4.For the kefta, place the ground meat in a large salad bowl. Season it with salt, pepper, cumin and paprika according to your taste.
- 5.Place the previously washed onion, garlic clove, parsley and cilantro in the chopper until a finely chopped mixture is obtained.
- 6.Add this aromatic mixture to the meat and work with your hands for a few minutes to blend the flavors. Taste and adjust seasoning if necessary.
- 7.Form pellets the size of a ping-pong ball, then gently place them on the tomato sauce in the tajine. Cover and cook 15 minutes over very low heat.
- 8.After this time, lift the lid and break the eggs directly on the pellets, as much as you like! Close the tajine immediately.
- 9.Let cook for about 8 minutes while regularly monitoring the cooking: the white must be taken but the yellow still flowing. Serve hot with traditional Moroccan bread or white rice. Enjoy!
