- 100 g 100 g Flour
- 1 1 Egg yellow(s)
- 15 cl 15 cl Ice water
- Sunflower oil
- Salt pepper
Method
- 1.Preparation of shrimp
- 2.Decorate the shrimps, keeping the tail and shell just at the base of the tail (in order to be able to hold the shrimps more easily when soaking them in the frying paste, then tasting them!).

- 4.In a salad bowl, beat the egg yolk with the ice water and then the flour (preferably sifted to avoid the formation of lumps).

- 8.Dip the shrimps into the dough (holding them by the tail) and place them in the hot oil. Let the tempuras cook until they are golden, then drain them on absorbent paper.
