Tiramisu with Christmas spices

- 16 16 Biscuits à la Cuillère Bonne Maman®
- 250 g 250 g mascarpone
- 3 3 eggs
- 100 g 100 g sugar
- 1 c. à café 1 teaspoons of vanilla extract
- 1 c. à café 1 teaspoons of Christmas spices (varied blend of starry anise, cinnamon, ginger, nutmeg)
- cocoa powder
- 10 cl 10 cl of water
- 3 c. à soupe 3 tablespoons of honey
- 2 c. à soupe 2 tablespoons of milk
- 2 2 cloves
- 2 2 stars of badian
- 1 1 cinnamon sticks
- orange bark (optional)
- 1 1/2 vanilla pods
Method
- 1.Prepare the infusion with spices: pour the water and milk into the pan. Bring to a boil. Then add honey, orange bark, spices and let infuse for a few minutes. Then let cool and filter the preparation.
- 2.Separate the yolks from the egg whites.
- 3.In a first container, mix the yellows with sugar and vanilla extract and Christmas spices. Add the mascarpone and whip it all vigorously.
- 4.Mount the whites in firm snow and gently incorporate them into the preparation.
- 5.Soak the Biscuits with Bone Mamère® in spices infusion and coat the bottom of the verrines.
- 6.Pour a layer of mascarpone cream and repeat the operation.
- 7.Place in cool for at least 4 hours.
- 8.Sprinkle with cocoa before serving.
