Vegetarian mint pea velvet

- 600 g 600 g Frozen peas
- 1 1 Yellow onion(s)
- 1 1 clove(s) Garlic
- 80 cl 80 cl Vegetable bud
- 20 cl 20 cl Liquid cream
- 10 10 Fresh mint(s)
- 1 c. à soupe 1 Tbsp. Chouquette(s)

- 1 c. à soupe 1 tbsp. Lemon juice
Method
- 1.Preparation of ingredients
- 2.First peel and thinly mince yellow onion. Peel the clove and chop it. Prepare frozen peas by placing them at hand. Rinse the fresh mint leaves carefully and dry them gently. Collect the rest of the ingredients on your work plan.
- 3.Cooking
- 4.Pour the vegetable broth into a large saucepan and bring it to a boil. Add onion and garlic, then let go over medium heat for 2 to 3 minutes. Add the frozen peas and continue cooking for about 10 minutes until they become tender.
- 5.Mixing
- 6.Out of the heat, add the fresh mint leaves to the pan. Use a diving mixer to reduce the set to smooth velvety. Take care to mix long enough to achieve a homogeneous and pieceless texture to ensure a silky result.

- 8.Pour the liquid cream into the velvet, then add the tablespoon of lemon juice. Mix thoroughly. Salt and pepper to your liking. Grind seasoning if necessary after tasting, for a perfect balance between the sweetness of the peas and the freshness of the mint.

- 10.Spread the warm velvet in hollow bowls or plates. Sprinkle with cabbages (or without crusts) to bring a crispy note. Add some extra fresh mint leaves. Serve immediately and taste warm.
