- 1 c. à soupe 1 tbsp Olive oil
- 1 c. à café 1 cup of coffee Big salt
- 100 g 100 g Ricotta
- 10 10 sheets Menth
Method
- 1.Preparation
- 2.Wash and cut your zucchini coarsely. Rinse the mint. Sauté the pieces of zucchini in a large saucepan with olive oil and large salt until they start to brown. Cover with water and cook for 10 minutes. Cut the fire and add the ricotta.
- 3.Mixing
- 4.Mix it all, until you get a velvety zucchini with creamy cheese. Let it cool. Once cooled, add the mint leaves, then mix again. Adjust salt and pepper.

- 6.Serve the cold velvet with mint and fresh cheese zucchini in cups for an entry.
