Shrimp verrine

Ingredients
For 4 servings
- 200 g 200 g Shelled pink shrimp
- 2 2 Pink grapefruit
- Aneth
- 150 g 150 g White cheese 0%
- 1 1 Egg yellow(s)
- 1 c. à café 1 coffee c. Strong mustard
- 1 c. à soupe 1 tbsp. Lemon juice
- 1 c. à soupe 1 Tbsp Tomato concentrate
- 1 c. à café 1 coffee c. Tabasco
Method
- 1.mix lemon juice with mustard and egg yolk. Whisk vigorously and gradually incorporate white cheese. Season and add 1 tbsp of tomato concentrate and tabasco at your convenience.
- 2.Cut the grapefruits in 2 and pick up the quarters.
- 3.Mix shrimp (reserve 6), grapefruit quarters and cocktail sauce, spread in small verrines. Decorate with the reserved shrimps and cool. Serve very fresh, decorated with dill.
