Crispy goat wrap

- 3 3 rocamadour or cabecous
- 3 c. à soupe 3 tablespoons of flour
- 1 1 eggs
- 3 c. à soupe 3 tablespoons of breadcrumbs
- 2 c. à soupe 2 tablespoons of olive oil
- 1 1 cake of wheat
- 1 c. à soupe 1 tablespoons of fried onion
- 1 1 large salad leaves
- candied tomato
- 1 1 yogurt
- 1 pincée 1 pinches of salt
- 1 pincée 1 pinch of pepper
- parsley
- coriander
Method
- 1.Start by preparing the crispy goat. Using two forks, put the slices in the flour, in the beaten egg, then in the breadcrumb. Repeat the operation by ironing the slices in the beaten egg and breadcrumbs.
- 2.Heat the olive oil in a skillet. Gently place the goat slices in the skillet and brown for 2 to 3 minutes on each side. Settle.
- 3.Then prepare the yogurt sauce with herbs. Mix yogurt with salt, pepper, parsley, coriander and mint. Settle.
- 4.Place a nice salad leaf in the centre of the wrap. Then place the goat crunch on the salad, then pour the sauce over. Finish with a few pieces of candied tomatoes and fried onions, then close the wrap with the left and right side to the centre.
